Lemon Tahini Sauce: Yields 1 cup
- ½ cup tahini
- 4 tablespoons fresh lemon juice about 1.5 juicy lemons
- 4-6 tablespoons water more if needed for your preferred consistency
- 1 garlic clove minced
- salt and pepper to taste
- flat leaf parsley chopped, to taste
Greek Meatball Bowl
- 1 of your favorite meatball recipe or frozen meatballs
- 6 cups cooked broccoli rice
- 1 pint cherry tomatoes sliced
- 1 cup kalamata olives sliced
- 1 cucumber diced
To Serve:
- feta cheese
- fresh mint julienned
- lemon wedges
- slivered almonds
Make tahini sauce. In a bowl, whisk together al tahini sauce ingredients. Taste and adjust for more lemon, salt, or pepper if needed. Thin out with water to your preferred consistency.
Cook or heat up meatballs.
